We all know about the health benefits of bone broth but there are other ways in which to use this elixir. Use bone broth to make a quick soup by simmering finely chopped leeks, carrots, and onion until the vegetables are tender. Add chopped cooked meat, drizzle with olive oil, and serve with some freshly chopped parsley or chives. I also like cooking root vegetables like carrots or parsnips in bone broth until tender and then placing the cooked vegetables in a food processor to make purees. You can also reduce bone broth in a pan until it is slightly thickened, then whisk in some cold butter and chopped herbs to use as a glaze for cooked vegetables or as a sauce for meats.
Don’t be afraid of adding different spices and vegetables when making bone broth. Add star anise and a large knob of ginger when making bone broth to add a warming note. When drinking the broth, you can add chopped scallions and a few drops of toasted sesame oil and even add a poached egg for a more substantial meal. Adding cilantro stems, ginger, a cinnamon stick, fish sauce, and black peppercorns will give you a more of a Vietnamese flavor profile to the broth.
