Leftover bacon fat is one of my favorite ingredients to have on hand as it adds an extra layer of smoky flavor to any number of dishes.  After cooking bacon, pour off the bacon fat into a glass jar or bowl and keep it in the refrigerator until ready to use.

Here are some of my favorite ideas for using bacon fat:

Use it to fry eggs

Sauté vegetables

Warm fat until it is liquid again, and use it to preplace some of the oil in a vinaigrette for spinach salad

Replace part of the oil with liquefied bacon fat in your favorite aioli recipe

Browning some of the vegetables in bacon fat before making soups or braises adds a smoky note

Mixing some of the cold bacon fat into my hamburger patties

Using it to brush my ramekins before making baked or coddled eggs

Tossing cubed sweet potatoes in liquefied bacon fat before roasting in oven
